Taco Pie

Tonight was one of those nights that we didn't have a lot in the cupboards, but didn't want to go grocery shopping. We could have easily made spaghetti, since we always have stuff for that around, but we just weren't in the mood for pasta. So, I started pulling things out of the cupoards and fridge and came up with this taco pie.

Ingredients:

1 lb ground beef (or turkey)
Onion
1 packet taco seasoning
3 Tortillas
1/2 jar Philadelphia cooking creme Santa Fe flavor
1 can refried beans
Shredded cheese (I didn't measure this, just did a big handful)
1 1/2 c bisquick
1 egg
2/3 c milk

If you want to skip the Bisquick top you could easily just top with another tortilla and it would be yummy!

Preheat oven to 400. Spray a round pan with nonstick spray. Brown ground beef with onion and mix with the taco seasoning (use packet directions). Mix together Bisquick, milk, and egg in a bowl and set aside.
You are then going to do layers in this order

-Tortilla
-Spread a thin layer of cooking creme over it
-Beans
-Tortilla
-Cooking creme
-Ground beef
-Tortilla
-Cooking creme
-Shredded cheese
-Bisquick mixture (or another tortilla to top it off)

Bake for 25-30 minutes. (You may need less time if you top with tortilla). I baked for 30 min and got a nice brown crust on the top.
